I would like to know how much Percentage we lose each time we Level up.

1) The specific answer to your question is :
=> Increasing of the production time (the number in brackets is the increasing compared to the level merchant)

Merchant --> Retailer : 13,33% (13,33%)
Retailer --> Trader : 5,88% (20%)
Trader --> Small Businessman : 5,56% (26,66%)
Small Businessman --> Businessman : 2,63% (30%)
Businessman --> Upmarket Businessman : 2,56% (33,33%)
Upmarket Businessman --> Manager : 2,50% (36,66%)
Manager --> Entrepreneur : 2,44% (40%)
Entrepreneur --> Large Scale Manufacturer: 2,38% (43,33%)
Large Scale Manufacturer --> Industrialist : 2,33% (46,66%)
Industrialist --> Billionaire : 2,27% (50%)
Billionaire --> Big Industrialist : 2,22% (53,33%)
Big Industrialist --> Tycoon : 2,17% (56,66%)

In this guide reference, you'll find one entitled "How does production drop off per level", where the above answer is taken from. I'm not against people asking questions and curious about game mechanics per say, on the contrary I think it's a very healthy process, which later makes great players. However, in the specific case a player community wrote, indexed, organised and stickied guides intended for newcommers, I feel somewhat uneasy about answering questions by simply copy-pasting something straight from an already existing and well-advertised guide (particularly when I didn't write it and don't have any merit knowing these formulas). It appears you just started, so I totally understand you might not have noticed it yet, but I suggest you'd have an eye to the Guide to Guides. Not to read it from top to bottom right away, just to be familiar with its content table. As you will progress in the game and will likely be curious about other aspects of the mechanics, it will always be time enough to read it by then.
I would much prefer -and other regular posters too, I'm sure-, answering more in-depth questions you'd still have after reading those guides =)
