Does it mean that if we have more employee we can sell stuff faster and more on the sales racks?

yes - or you can sell the same amount in the same time at higher prices

and the store "productifity" is rising linear - not like the one of the production buildings

If you double the size of the store, you can double your employees and you can sell the double amount for the same price.
