I notice that ther is a cattle building and a butchery.
I suppose the two ar compulsory to get beef or chicken. but i would like a confirmation.

You're mostly correct.
(BTW You can click the "Help" icon at the top of the page in game, then click "Buildings" on the left, and look up what either of those buildings make.)
A Cattle-breeding plant makes Cattle, Chickens, Eggs, Lambs, Milk, Pigs, and Wool - all from varying amounts of water and corn.
A Butcher's Shop makes Beef (from Cattle), Lamb (from Lambs), Pork (from Pigs), Mincemeat (from Beef), and Sausages (from Pork)
So note that Chicken doesn't need a butcher at all, it goes straight from Cattle-breeding to Grocery. (As do Eggs and Milk.) Beef, Lamb, and Pork get processed through the Butcher. Mincemeat and Sausages get processed through the Butcher twice.
