For contests you can make more in red so for contests red is better, when the contest product is worth 1000s of caps the few extra caps in production costs don't matter really.

and if it does takes more time to build, you'll start producing later and then the prices of that contest product will drop

No

I think it's because it does sound more like a farming product which would make it a product for the green zone and would sort of make sense for higher production in green, but meat these days is more likely to be produced in a factory like production line hence the red zone i'm guessing.
