When does the new buisness day start? because doesn't the shop stats only refresh once daily?

Not 100% sure, but somewhere around 0.00 GMT.
I always thought it was 0.00 hour in the german time zone, but someone else claimed it would be 1.00 which would be 0.00 GMT.

I thought so too but I put some coffee powder (3500) on sale in Turkey (R2) and it still says there is only 15 supply. And I put it on about 7 GMT yesterday. Could this be a bug.

Not 100% sure, but i remember someone claiming you had to visit your store for the sales to be added to the daily info.

I believe it's 0.00 Servertime, which is 0.00 for GMT+1.
