how can i relate the supply and demand to the selling time in grocery. for example the demand for apples is higher then strawberries but strawberries got sold faster. can anyone help me with that ?

It isn't just supply and demand. Its about pricing and quality. Look towards the bottom of the store's screen and you can see survey results. Also make sure you click the country the store is in to get the right supply/demad ratio.

Average price and average quality for each individual product. They're the result of other players' sales, and are available to view in the stats page.

It's not that you missed something. You incorrectly presumed that all products are balanced. But they are not.

Try putting more products in your shop. I observed that more products reduce the time and better if you have advert in your stores. Check the supply and demand and choose the best place. Change the price, Best you put the time into around 24hrs.
