Contrary to RL economy demand almost does not affect the speed of sale. The speed of sale is affected almost solely by the supply side (prices and quality) -> be careful this leads in lot of cases to contraintutive retail market behaviour.
Contrary to real life unmet demand does not translate into the ability to sell the goods. If you study the stats you will find really lot of goods with supply close to zero, because you cannot sell at profit despite huge unmet demand.
IMHO this is the main weakness of this game (which is really good in other respects)
